Toffee Pretzel Leprechaun Cookie Bars & Free Lucky Printable
One of the things I enjoy teaching my children is how to show appreciation for the loved ones in our lives. Not just on Valentine's Day or Teacher Appreciation Day or Birthdays, but every time we get a chance. Since St. Patrick's Day is rapidly approaching I put together these Toffee Pretzel Cookie Bars and some printables to help make them look extra special. I love how easy we have it now a days (yes, I just used the term now-a-days) to throw a little gift together in just minutes with a treat and free printable found with a quick Pinterest search! These were so good I almost couldn't give them away. The tops get all flaky and cracked and the centers are super soft and chewy. I even went to the trouble of picking out all the green M&Ms for effect. Actually, the boys went to all the trouble to pick out the green ones. It's a great little activity to keep them busy and learning at the same time.
Jen totally got me hooked on these toffee milk chocolates from Hershey's. I could just sit and eat an entire bag. I usually have these and York Peppermint Patties in the freezer at all times. You know....in case of a chocolate emergency.
Because it would just be embarrassing to sit and eat this entire batch all by myself, I created these fun printables so we could pass some cookie love out to all our friends. We've pretty much got all your favorite peeps covered. The rainbow colors make them perfect for St. Patrick's Day, but they are neutral enough to use any day of the year!

- 1/2 lb butter {2 sticks}
- 1 cup sugar
- 3/4 cup brown sugar
- 1/2 Tbsp vanilla
- 2 eggs
- 3/4 tsp baking soda
- 3/4 tsp salt
- 3 cups flour
- 1/4 Pretzel M&Ms
- 1/4 cup Plain M&Ms
- 1/4 cup Hershey's Toffee Almond Milk Chocolate Nuggest (chopped)
- 1/2 cup semi sweet chocolate chips
- Bake @375 for 8-10 minutes on an ungreased cookie sheet.
- Mix butter, sugars, vanilla and eggs.
- In another bowl mix remaining dry ingredients (excluding chocolate)
- Sift into wet ingredients and mix thoroughly then mix in chocolates
- Line a 9x13 baking dish with parchment paper and press dough into it evenly
- Bake 375 degrees for 20-25 min. Top should be caramel brown and crackled.
- Let cool long enough to be able to lift paper out of pan and let cool completely. Then cut into bars or bite sized pieces and enjoy!
