Peanut Butter Chocolate Chip Valentine's Day Cookie Recipe
My kids have really into baking lately. Gavin pulls box mixes out of the pantry everyday asking for us to make them. Just today he decided he wanted banana cake, didn't have a mix for that. Sorry buddy! The funny thing is, they never want to eat what we make. They take one bite and they are over it. At first it frustrated me to do all that work and have no one eat the stinking cake, but when I stopped to think about it I realized that it's not eating the final product that they crave.
It's the quality time. Geniuses I tell you, I am raising geniuses! Using my own addition to desserts against me. Just kidding, I am loving that they are so into baking. This week we made these fun Valentine's Day cookies so we snapped some photos to share with you all.
I really love these ages of the kids. 2, 4 & 6. People always get a kick when I tell them their ages and chuckle as they usually ad "you really have your hands full!" If they only knew the insanity that occurs in this house on the daily. It's so nice to tell the kids what ingredients we need and have them scurry about the kitchen gathering what we need.
They feel so big when I let them pour the ingredients into the mixing bowl one by one.
After we got everything mixed I used a small ice cream scoop to make small dough balls and instead of rolling them in plain sugar we rolled them in sprinkles and colored sugar. They were more than happy to clean up the sprinkles that spilled over onto the counter.
Ingredients:
1/2 cup granulated sugar |1/2 cup packed brown sugar | 1/2 cup peanut butter | 1/4 cup shortening | 1/4 cup butter or margarine, softened | 1 egg | 1 1/4 cups all-purpose flour | 3/4 teaspoon baking soda | 1/2 teaspoon baking powder 1/4 teaspoon salt
Instructions:
- Mix sugars, peanut butter, shortening, butter and egg in large bowl. Stir in remaining ingredients. Cover and refrigerate about 2 hours or until firm.
- Heat oven to 375ºF.
- Shape dough into 1 1/4-inch balls. Place about 3 inches apart on un-greased cookie sheet. Flatten in crisscross pattern with fork dipped into sugar or sprinkles.
- Bake 9 to 10 minutes or until light golden brown. Cool 5 minutes; remove from cookie sheet. Cool on wire rack.
Make sure you put a couple cookies to the side before some tiny hands swipe them all.
