Shrimp Ceviche Recipe
One of my favorite foods is Shrimp Ceviche. I ate it 3 times a day everyday of our Cabo vacation and I had been missing it. I wanted to find an quick and easy snack together before church today and happen to have a bag of frozen cooked shrimp in the freezer. After a quick chop of a couple veggies I had a healthy, delicious snack that took a couple minutes to prepare. This shrimp ceviche is a great dish to bring to any party, makes an impressive alternative to bottle salsa.
Traditionally ceviche is made with raw fish that is cooked in something acidic like lime juice. I am very particular about my fish and how it's prepared so I prefer using shrimp. You can use fresh shrimp if you have some extra time on your hands to cook and cool it, but frozen worked just a well.
If you are looking for a tear free way to chop onions I highly recommend using a food chopper like THIS one. It saves a ton of time and is really simple to use. I use it all the time to chop veggies for my homemade Chicken Noodle Soup.
This is a great recipe to serve over avocado halves, salad or nachos. Keep a large container in the fridge to help curb craving for sweets or junk food.
Quick & Easy Shrimp Ceviche Recipe
Ingredients:
- 1 cup tomato (seeded and chopped)
- 25 aprox. cooked peeled shrimp chopped
- 1/4 cup diced red onion
- 1 avocado diced
- 1/2 cup cucumber diced
- 1/4 cup cilantro chopped
- 3 limes
- 1 lemon
- 1 tablespoon olive oil
- red pepper flakes to taste
Preparation:
- In a small bowl combine shrimp, onion and juice from lemon and limes. Set aside
- In a large bowl combine tomato, avocado, cucumber and olive oil
- Add in shrimp mixture, mix well.
- Toss with cilantro and red pepper flakes to taste for added heat
- Serve chilled with tortilla chips
