One of the things that I love about my husband is the amazing family that I married into. His Grandparents grew up in Mexico and have strong ties to their Mexican heritage which I just adore. I love hearing about their childhood memories and learning family recipes. They spend time together often and one of the things we usually do is go out to eat at a favorite Mexican restaurant. Being a lover of dessert, naturally my favorite thing is when they bring out the fried ice cream at the end of the meal. Crispy, sweet coating on the outside and cool, creamy vanilla ice cream on the inside.
I'm usually fending off the kids from eating every last bite so I came up with a quick and easy fried ice cream recipe that you can make at home. Another thing we love to do together is go to the movies after dinner. There are few things better than a fully tummy, a good movie and being with the ones you love most.

Faux Fried Ice Cream Recipe
Ingredients: 4 cups vanilla ice cream | 2 cups Honey Bunches of Oats Cereal | 2 T sugar | 1 t cinnamon |honey (optional)
Instructions: 1. Divide ice cream into 4 scoops on squares of plastic wrap. Twist closed and form into balls them freeze 1 hr. 2. Place cereal, sugar and cinnamon in a plastic baggie and seal. Roll over with a rolling pin to crush cereal. 3. Unwrap ice cream balls and roll in crushed cereal, pressing it into the ice cream. Drizzle with honey as desired. ENJOY!
Honey Bunches of Oats was a staple in our home growing up so I am happy that I get to pass that love of this cereal on to our kids. There are so many wonderful family memories and traditions centered around food and enjoying meals together.
