Caramel Marshmallow Popcorn Recipe
My kids are popcorn fanatics, Gavin in particular. It's their favorite movie treat and they often ask for it as an after school snack. I like plain homemade popcorn, but what I love most is gooey, sweet caramel marshmallow popcorn. If you have not tried it before, you are in for a treat. It only takes a couple minutes to whip together and makes a really great teacher or neighbor gift. There is nothing like this sweet, salty, crunchy goodness. The hint of salt from the butter is perfectly complimented by the sweet, sticky marshmallow.
I use a microwave popcorn bowl to pop our kernels in the microwave. You can use one of the boxed microwave popcorns, but using the bowl requires no oil or additives. It's simply popcorn and that is it.
Look how the popcorn coating has that light caramel color! The biggest challenge of this recipe is going to be keeping yourself from eating the entire batch.
Chances are that you already have all these ingredients on hand. It's a great way to use up that half empty bag of marshmallows that have been hiding out in the back of your pantry.
Caramel Marshmallow Popcorn Recipe
Ingredients: 8 cups popped popcorn | 1/2 cup butter | 1 cup brown sugar | 1 T light corn syrup | 2 cups marshmallows
Instructions: set popcorn aside in a large mixing bowl | melt butter in a sauce pan on the stove | add remaining ingredients and stir till marshmallows are melted and everything is combined | pour mixture over popcorn and mix till evenly coated | serve or form popcorn balls
