Brown Butter Frosted Banana Bread Bars
Anyone else find themselves wondering what to do with over ripe bananas? I find myself asking that almost every week and the answer is either freeze them for smoothies or made banana bread. Since we are all stocked in the freezer I decided to figure out a way to make banana bread even better. I happened to have some Reese's peanut butter chips in the pantry and more butter than we could possibly eat so I did the only logical thing... Brown Butter Banana Bread Bars with peanut butter chips. They turned out so good, we couldn't keep our hands off of them!
These were so simple to make and using a bar pan made the batter go a long way. These bake up so soft, almost like a light and fluffy cake, but they don't crumble. The peanut butter chips in each bite are a fun little surprise, like a party in your mouth.
I can not rave enough about this brown butter frosting though. It is seriously my new favorite, I even used it to ice these Vanilla Oatmeal Cookies and they were to die for. Everyone was fighting over them, my husband, my kids, my neighbors. If you ever need a frosting recipe for a cake, cupcakes, cookies, just to eat with a spoon...this is our go to!
Brown Butter Frosted Banana Bread Bars Recipe
Ingredients:
- 1 ½ cups sugar
- 1 cup sour cream
- ½ cup butter, softened
- 2 eggs
- 1 ¾ cups (about 4) ripe bananas, mashed
- 2 teaspoons vanilla
- 2 cups flour
- 1 teaspoon baking soda
- ¾ teaspoon salt
- 1/2 cup peanut butter or chocolate chips
Directions:Heat oven to 375 degrees. Line a 10x15 jelly roll pan with parchment paper or use a 9x13 for thicker bars and bake 10 minutes longer. Beat sugar, sour cream, butter and eggs until creamy. Blend in bananas and vanilla. Add remaining ingredients and blend for one minute. Stir in peanut butter or chocolate chips and spread in pan. Bake 20 to 25 minutes until golden brown. Cool slightly until warm and frost with Browned Butter Frosting.
