I have THE most AMAZing recipe for you all! Like blow your mind, so delicious you will make it everyday for a week. Believe me, I know from experience. I begged Lennie to let me get a Vitamix for Christmas last year and promised that I would use it all the time. After a lot of convincing he finally said yes so I’ve been experimenting with it and just love it! I stumbled upon this concoction and it was love at first sip. I have NEVER liked coconut…until I was pregnant with Kennie. I have no idea what happened, but I am in love with it now, can’t get enough, so this recipe makes me happy.
I am a sweet fanatic so not having a treat after dinner is such a challenge for me. I’ve found that the more time that passes, the less I miss it. BUT I still miss it so this recipe is the perfect after dinner treat. It is literally like Hawaii in a glass. I can practically close my eyes and see myself sitting at Dukes in Waikiki…oh how I love that place! Have you been? #MyHappyPlace Enough rambling, on with the recipe.
3/4 cup Almond Milk
1 Heaping cup of frozen pineapple
1 T Shredded Coconut
Throw everything in the blender in the order listed and blend!Really really complicated, but I think you all can handle the challenge.
*If you like it extra thick like me (almost like frozen yogurt) toss in a couple ice cubes at the end. Here’s an added bonus:
